Recipe: CARROT BITES

These energy balls are deliciously rich, like carrot cake, with apple sauce and raisins for added flavour. Walnuts contain essential omega-3 fatty acids that reduce inflammation and make your skin glow.

Ingredients

50 g (approx.1 dl) of rasins

30 g (approx. ¾ dl) almondflour 

60 g dried coconut flakes

75 g (approx. 1 dl) finely grated carrots 

75 g walnuts 

2 tbsp coconut flour 

2 tbsp applesauce 

1 tbsp xylitol or erythritol 

1 tbsp coconut oil

1 tsp cinnamon powder 

1 tsp vanilla extract 

pinch of sea salt 

Put the ingredients in a food processor and blend to a dough. Mix the ingredients together until smooth. Don’t overmix – the dough will have a chewy feel to it. Take a bite-sized amount of the dough and roll into balls.  The balls will keep in the fridge for a week, store in an airtight container. 

 

The recipe makes about 24 balls.

One ball contains: Energy 66 kcal – Fat 4,8 g (saturated 2,1 g) – Carbohydrates 3,6 g – Sugar 2,2 g – Protein 1,2 g

Recipe: FIG & WALNUT BALLS

These energy balls are made with a generous amount of dried fruit, making them perfect for boosting energy levels before or after exercise.  

Ingredients

100 g dried figs 

50 g (approx. 1,1 d) of oat flakes 

75 g walnuts, chopped and roasted 

60 g chopped and roasted nuts 

3 tbsp orange juice 

1 tbsp vanilla extract 

pinch of salt 

Healthy no bake energy balls with oats, nuts, and dates. Perfect snack for a quick energy boost.

Put the dried figs, vanilla extract, orange juice and salt in a food processor and blend until a thick puree is obtained. Add the oat flakes and nuts and blend again until smooth. Leave a slight chewy feel. Take a bite-sized amount of the dough and roll into balls.  The balls will keep in the fridge for a week, store in an airtight container. 

The recipe makes about 20 balls.

One ball contains: Energy 60 kcal  – Fat 3,9 g (saturated 0,4 g) – Carbohydrates 4,4 g  – Sugar 2,8 g – Protein 1,4 g
